NEW 2017 BLUE CRAB
Louisiana is the nation's top producer of the blue crab, scientific name Callinectes (Greek for "beautiful swimmer") sapidus (Latin for "savory"). These savory beautiful swimmers often wind up in boiling pots, gumbos and stews and as the main ingredient in crabmeat au gratin. They shed their hard shells as many as 25 times in their average 3-year lifespans, leaving them very flexible for short periods and susceptible to being battered and fried as soft-shelled crabs. How to catch them?. Just find some brackish water, tie a raw turkey neck on a long string and scoop up the crabs with a long-handled net when they come to feed on the bait. Be sure to have a container with a lid and remember that these crabs not only have strong sharp claws, but four front teeth. Have fun and bon appétit!
